Masseria San Domenico is the original luxury masseria in Puglia — the property that, when it opened in 1996 under the Melpignano family, essentially invented the masseria-honeymoon category that Borgo Egnazia, Torre Maizza, and the newer arrivals have since refined. A 15th-century fortified masseria built originally by the Knights of Malta, sitting on a 100-acre olive estate on the Adriatic at Savelletri, with 40 rooms (smaller than Borgo Egnazia, more intimate, family-owned), an enormous saltwater pool fed directly from the sea, a private beach across the SS379 (accessed by a small underpass and shuttle), an 18-hole golf course (the same San Domenico course shared with Borgo Egnazia), and — the defining feature — the original Aqua Sea Therapy thalassotherapy spa, the first in Italy and still operating as the most credible wellness operation among the Puglian masserias, with seawater pools at four temperatures, marine algae wraps, and a full medical-grade thalasso program. The food at the Aqua restaurant is solid traditional Pugliese under chef Christian Tedeschi (no Michelin star but at-level cooking) and the beach club restaurant is excellent for grilled-fish lunches. The honeymoon move is an upper-floor Junior Suite with sea view in the original masseria, or one of the new Garden Suites with their own private outdoor space. The defining moment: thalasso pool morning, lunch at the beach club on the Adriatic, sunset on the original masseria terrace with the olive groves below. Caveats: the property is the most “mature” of the great masserias — feel and aesthetic are slightly more 1990s-Italian-luxury than the contemporary polish of Torre Maizza or Borgo Egnazia; the beach is across the road (underpass + shuttle) rather than walking-on-sand from the property; and the food is solid rather than exceptional. But for honeymooners who want the original Puglian masseria experience with a genuine thalassotherapy program and family-owned warmth that the bigger Borgo Egnazia does not replicate, San Domenico remains the choice.
