Hostellerie du Chapeau Rouge is the most historically continuous hotel in Dijon — a 30-room property in the heart of the old town that has operated as a coaching inn since 1863, opposite the Notre-Dame church and 200 metres from the Palais des Ducs. The Michelin restaurant under chef William Frachot (one star since 2005, two stars between 2013 and 2020 before strategic refocus) is one of the serious dining addresses in Burgundy outside the Côte d'Or — modern Burgundian cuisine with a strong herb and vegetable focus from a kitchen garden on the edge of Dijon. The honeymoon proposition is the urban Burgundy alternative: most honeymoon couples reflexively base in Beaune (which is correct for cellar-focused trips), but Dijon offers a serious historic city with the Palais des Ducs, the half-timbered streets, the great mustard heritage, and excellent restaurants — and Chapeau Rouge is the only properly elevated hotel inside the medieval walls. The 30 rooms have been progressively updated in the 2010s — contemporary calm in the historic shell, marble bathrooms, good beds.
