Ashford Castle is the honeymoon castle that every other castle hotel is measured against — a genuine 13th-century Anglo-Norman fortress on the shores of Lough Corrib in Cong, County Mayo, immaculately restored by Red Carnation in a $75 million reinvention that finished in 2015. Eighty-three rooms inside the original castle walls, a 350-acre estate that includes Europe's oldest falconry school (since 1959), an indoor pool carved beneath the stone, the spectacular Cullen's at the Cottage and George V dining rooms, and a Cigar Terrace facing the lake at sunset that is one of the most romantic addresses in Europe. What sets Ashford apart from the half-dozen other Irish castle hotels is the operational polish — Red Carnation runs a tighter ship than Relais & Châteaux, with the kind of name-on-arrival, anticipated-need service usually reserved for Asian palace hotels.
