Ashford is not adults-only — families with older children stay too, particularly in school holidays. The vibe stays adult but if you imagine a Relais & Châteaux all-couples scene, that's not Ashford.
The original castle suites have the romance; the newer wing rooms (Mountbatten Wing) are more contemporary but lose much of the atmosphere. Pay up for the castle proper.
Weather is genuinely Irish — even July averages 17°C and rain three days in five. Pack waterproofs; this is not a sunbathing hotel.
