Hôtel Le Champ des Oiseaux is the genuinely under-appreciated southern-Champagne pick — a 15th-century half-timbered townhouse in the medieval old town of Troyes, in the southern Aube department of Champagne. Twelve rooms in three connected medieval buildings, an interior courtyard garden, breakfast served in a vaulted stone room with original beams from 1450.
