Thyme is the most distinctive small hotel in the Cotswolds — Caryn Hibbert's decades-long project to restore an entire Cotswold village (Southrop, near Lechlade) into a working country estate with 31 rooms and suites spread across the manor house, the tithe barn, and a dozen restored Cotswold-stone cottages along the village lane.
