Thyme is the most distinctive small hotel in the Cotswolds — Caryn Hibbert's decades-long project to restore an entire Cotswold village (Southrop, near Lechlade) into a working country estate with 31 rooms and suites spread across the manor house, the tithe barn, and a dozen restored Cotswold-stone cottages along the village lane. The kitchen garden is two acres of biodynamic vegetables that supply the Ox Barn restaurant — the centrepiece of the property, a 17th-century stone barn with a vast oak-trussed roof and one of the best country restaurants in England under head chef Charlie Hibbert (Caryn's son). The Bothy Spa is small but exceptional — six treatment rooms, a 15m indoor pool with skylight, a hammam, and Bamford Botanic products developed on the estate. There's a cookery school in a converted Victorian school house, a still room making botanical apothecary products, a tweed-themed Baa Bar in the original village pub, and walks along the River Leach.
