Château de la Chèvre d'Or is the eyrie of the Côte d'Azur — a Relais & Châteaux property spread across the medieval village of Èze, the perched stone hamlet 427m above the sea between Nice and Monaco. Forty-five rooms and suites scattered across the village houses, the two-Michelin-star main restaurant on a clifftop terrace, an infinity pool that appears to drop into the bay below, and a spa in the village vaults. Walt Disney was so taken with Èze that he based the visual language of his castle on it. The genuine point of staying at Chèvre d'Or rather than visiting Èze on a day trip is the night — after 6pm the day-tripper coaches leave, the village empties, and you have one of the most romantic medieval streets in Europe almost to yourself. Watching the sunset over the bay from the upper terrace, with the lights of Cap-Ferrat coming on 400m below and the cliffs falling away beneath your feet, is one of the unmissable Côte d'Azur experiences.
